Bean Me Up!

I'm discovering the protein-rich world of beans! I like beans, peas, and lentils. On average, beans have twice the protein found in cereals. Most are a good source of thiamine and also have moderate amounts of riboflavin and niacin. I just made split pea soup using the bone from our Easter ham. Delicious, and nutritious, too!

In addition to being an oatmeal nut, I'm also a closet bean nut! I don;t really understand why other people don't eat beans regularly. Like you pointed out, they're nutritional powerhouses (who needs a silly fiber supplement when there's 35% RDA per half cup of these things?) and the variety never ceases! Have you realized just how many different sizes, shapes, colors, and tastes there are? Yes, beans are wonderful.

P.S. Have you ever cooked with yellow spit peas? The change in color is refreshing :)

Hi Penny, I made split pea soup out of our Easter ham bone and I used the yellow split peas! Funny you should ask! I find that beans do the gassy thing with me, so I keep a bottle of beano handy. It really makes a difference. The upside is beans are so filling and satisfying. I'm full after a single serving.
